This was our AWESOME dinner tonight! It was so good I just had to post it right now. This was my instagram post picture above, so the special effect gave it an orange "boost," but the ones below are more representative of the actual color of the gnocchi.

So today I decided to give it a try, and I have to say that delicious it is! It's also very easy to make, but NOT quick! I guess I made a much bigger batch than the recipe called for, I probably doubled the recipe. So in order for dinner to come out in time, I had to make half of it for dinner, and the other half I finished after dinner.
But this was a HUGE success at my home! Even my 3 year old who used to be the best eater EVER and now turned into a won't eat anything but bread and pasta without any sauce or veggies (although she still has to eat whatever was made, or else it keeps reappearing!), she ate this without any fuss and asked for more!
Now that's a success dinner at our house! ;)
Hope you enjoy it as much as we did! Next time I want to try with just almond flour or oat flour...this time I used white whole wheat flour, so it became a little heavier. But I rarely have white all purpose flour around the house, so I just used what I had at hand.
