I don't know about you, but for me, every night after we have put our kids to bed, the first thing that comes to mind is what will I have for my late night snack? It's one of my favorite times of the day, because it's usually when I get my special "treat"!
If I have dessert or sweets around, it's usually the "go-to" snack! When I'm being good, and don't have sweets around the house (or ate them all previous days), then I normally just eat a fruit. Pomegranate being my favorite late night snack fruit of them all!!!
But when I'm somewhere in the middle...I want something healthy but with a little bit of indulgence to it, I often turn to these...fruit parfaits!

My husband and I are crazy for pineapple, mango & coconut anything!!! And this day during dinner, I had mentioned a show I watched about restaurants that only serve garlic foods, and how I think that if I were to work in a place like that I would probably get so sick of garlic that I would not enjoy it anymore (even though I totally love anything and everything with garlic!). My husband replied that it was probably true, but that there is no way he would ever get tired of eating anything with pineapple, mango and coconut! That he could never get enough of that.
So that's how I remembered the frozen pineapple and mango in the freezer! Except I didn't have coconut...but it would have been perfect with it as well. So as soon as he went up to put the girls down for bed, I started working on this delicious parfait! Yum!!!

If I had been to whole foods, I probably would have used a coconut-based yogurt instead of a dairy-based Greek! But since I haven't been there in a while, all I had in hand was a thick Greek yogurt, which I also love but tend to avoid since it's dairy-based.
So I basically blended the frozen pineapple (which were SOOO sweet!!!) and frozen mangoes I had with some water in my Ninja Pulse. Then just layered it all in a cup, starting with some of the yogurt, some honey on top, a layer of the fruit puree, another layer of yogurt, a final layer of honey & of course some dark chocolate chunks on top!
