I did make some changes to it, in order to make it vegan. We try to limit our animal/dairy consumption to one or two meals a week (At least that's the goal! Sometimes travel, eating out, etc...makes it difficult to do so), so I'm always looking for opportunities to "veganize" recipes that otherwise include dairy or eggs. This one was pretty easy to do the switch and it still maintained a great taste!
This was a huge hit at home, everyone loved it, including little V! The only bummer was that there wasn't any leftover for my husband to take to work the next day, so make sure you plan well when you make this recipe. It will all be gone quick!
