For a while I have noticed that chocolate doesn't totally agree with me, but I have been intentionally ignoring it. Maybe it's all in my head? I couldn't possibly be sensitive to something as delicious as chocolate!!! But I can't deny the headaches, acne, and some other symptoms that I normally have following a good splurge on one of my favorite foods!
Recently because I have been following (gradually) the AIP (Autoimmune Protocol) diet, I noticed I have become A LOT more sensitive to certain foods. My reactions are a lot more severe and direct...which in a way makes it easier to find out what is bothering my body.
Recently I decided I needed a "me-time" but was a little lost with where to go. Normally my husband stays with the kids and I go enjoy a good latte somewhere and read a book. I was sooooo craving a latte...and thought for sure one wouldnt harm me. I figured since starbucks uses organic soy milk, that would be safer than regular milk from GMO, sick cows. So I ordered a soy Chai latte. 15 minutes later I notice my chronic post-nasal drip tripling...and I got a MASSIVE sinus headache. The diet asks that you not take ibuprofen...but I had to take three in order to be able to sleep! These headaches are not new to me...there were times I had them daily! So yes...I need to watch out what my body doesn't like.
(Big SIGH!) Goodbye chocolate :( for now...
Hello Carob!!! Hope our relationship can last without complications :)
Today I attempted my first Carob Chocolate Chips, and they were SUPER easy to make, and to my surprise, tasted pretty good too.

What you need:
Mix it all up, spread on a parchment paper and freeze! Can't get any easier than that :)
- 2 TBSP coconut oil
- 2 TBSP carob powder
- Raw honey to taste, I used 1 tsp.
